A Darker Roast, Arabica Only
A darker roast is usually sold in a blend, with Robusta supplying the bitterness. Vienna takes the other route: 100% Arabica, washed, roasted to medium-dark so the bitterness is high and the cup reads cocoa and oak, with low acidity and none of it coming from Robusta.
Making Vienna at home
Vienna is 100% Arabica taken to a medium-dark roast. The cup is cocoa and oak with a bitter-sweet finish and low acidity. Most dark roasts get their bitterness from Robusta, but here all of it comes from the roast, so you get a strong, dark cup that stays all Arabica.
