Cookie Dough Hot Chocolate: How a Cafe Builds the Amsterdam Trend

Cookie Dough Hot Chocolate: How a Cafe Builds the Amsterdam Trend

Cookie dough hot chocolate is a hot chocolate served in a cup lined with cookie dough, or in a baked cookie cup. Why should a cafe owner care? It is a new menu item that a cookie cafe can make from dough it already has, and we found no Indian cafe selling it yet. This article covers the two ways to build it, how to keep raw dough safe, what it costs, and who in India is set up for it.

The trend comes from Amsterdam. In October 2026, Pluk, a cafe at Reestraat 19, brought back a hot chocolate served in a cup lined with cookie dough at the rim. That is our reading of its public posts. In the same Nine Streets area, Het Koekemannetje serves hot chocolate in an edible cookie cup with a thick chocolate rim.

Two ways to build cookie dough hot chocolate

1. The dough rim. A band of cookie dough is pressed inside the top of the cup. The hot chocolate goes in below it. The customer eats the dough with a spoon as the level drops. This is the Pluk format, from what we saw of its posts.

2. The cookie cup. The cookie is baked into the shape of a cup. The inside is coated with chocolate so the drink does not soak through at once. This is the Het Koekemannetje format.

The rim is faster to serve and closer to the trend. The cup is safer, because the dough is baked. It is also harder to make in volume. That comparison is our judgement.

Two cut-away drawings. 1, the dough rim, as served at Pluk in Amsterdam: a paper cup with a band of cookie dough pressed inside the top and thick hot chocolate below it. The dough sits above the drink and stays raw. Good: faster to serve and closer to the trend. Watch: the dough stays raw. 2, the cookie cup, as served at Het Koekemannetje: a baked cookie shaped as a cup, lined with chocolate that slows the soaking. Good: safer, because the dough is baked. Watch: harder to make in volume, and it softens, so serve it at once.

Is edible cookie dough safe to eat?

Only if it is made to be eaten raw. Raw flour is a risk on its own, not only raw egg.

The US Food and Drug Administration says flour is a raw food. It says not to eat raw flour, dough or batter, because flour can carry harmful bacteria. It says raw eggs may also carry them, and that cooking is the only way to be sure food made with flour and raw egg is safe. It also says not to heat-treat flour at home, because home treatment may not kill all bacteria.

For a cafe, that means three rules for the dough rim:

1. Use flour that the supplier sells as heat-treated, with the certificate on file, or buy dough sold as ready to eat raw. Do not heat-treat flour in your own oven and call it safe. The first part is our advice. The FDA covers only home treatment.

2. Use no raw egg. An eggless dough removes the egg risk. FES and Dohful, named below, already bake eggless.

3. Do not count on the hot chocolate to cook the dough. The dough sits above the drink and stays raw. That last point is our judgement, not a lab test.

We found no FSSAI rule written for edible cookie dough. The general FSSAI hygiene rules for food businesses still apply. Ask your food safety consultant before you launch it.

The hot chocolate has to be thick

A thin drink soaks a cookie cup in seconds and runs under a dough rim. A thick cup holds its level and coats the cookie instead. One UK trade product, Zuma Thick Hot Chocolate, is dosed at 40 g of powder to 100 ml of milk. Our own thick cup is one 50 g sachet in 150 to 200 ml. The method is in the article below.

What cookie dough hot chocolate costs

A cup made with one 50 g sachet of our premix costs about Rs 60 to 88 in full, with milk and a cup. The dough rim or cookie cup is on top of that. A cookie cafe knows its own dough cost per gram better than we do. Weigh one rim or one cup on the scale, multiply by your dough cost per gram, and add it to the Rs 60 to 88. Write the result on the recipe card.

Most chain hot chocolates sell between Rs 200 and Rs 280. This is a dessert and a drink in one serve, so in our view it should sit above that range. Price it next to your best-selling cookie plus a drink, and charge a little less than the two together.

Cost one serve: the cup, Rs 60 to 88 for one 50 g sachet, milk and a cup, plus the dough, its weight in grams on the scale times your dough cost per gram. Together that is your cost per serve. Write it on the recipe card. Then a price ladder of three rungs. The floor: most chain hot chocolates sell at Rs 200 to 280, and a dessert and a drink sits above that. The middle: cookie dough hot chocolate. The ceiling: your best cookie plus a drink bought apart, set by your own menu. Price the serve a little below that ceiling. The price position is our judgement.

Cookie cafe menu ideas: who in India is set up for this

The trend needs a kitchen that makes cookie dough every day. In India, cookie-first cafes already do.

1. FES, Delhi. It calls itself cookie-first and serves an eggless menu. It opened a three-floor flagship in Lodhi Art District in June 2026, its sixth store in Delhi NCR.

2. Dohful, Delhi NCR. It sells eggless, large soft-baked cookies, baked after the order is placed. Its site lists outlets across Delhi, Noida and Gurgaon, plus university campuses.

3. The Cookie Dough, Mumbai. Its site lists cafes in Malad and outlets in Gurugram and Ahmedabad.

We did not find a cookie dough hot chocolate on any of their published menus. The dough, the ovens and the customers are already there. Only the cup is missing.

The dough, the ovens and the customers are already there. Only the cup is missing.

Will it last?

We do not know. In our experience, many drinks that spread on Instagram fade in weeks.

But the parts are not new. Cookie cafes in India already sell cookies with coffee, and Amsterdam already sells cookie dough as a hot chocolate flavour, at Chocolate Company. In our judgement, if the trend fades, a cookie cafe still has a thick hot chocolate on the menu.

Questions cafes ask

Does the hot chocolate cook the cookie dough?

No. In a dough rim the dough sits above the drink, and a hot drink is not a reliable way to cook it. Treat the dough as raw. That means flour sold as heat-treated or dough sold as ready to eat raw, and no raw egg. This is our judgement, based on FDA advice on raw flour and dough.

Can I heat-treat flour in my own oven?

The FDA says home treatment of flour may not kill all bacteria and does not make it safe to eat raw. A cafe should buy flour that the supplier sells as heat-treated, or buy ready-to-eat dough. Keep the supplier's label or certificate on file, and ask your food safety consultant what FSSAI expects.

Will a cookie cup leak?

It will soften with time, because a cookie absorbs liquid. Het Koekemannetje lines its cup with a thick chocolate rim, and coating the inside with chocolate slows the soaking. A thick hot chocolate soaks in more slowly than a thin one. Serve it at once, and test how long your own cup holds.

Is cookie butter hot chocolate the same thing?

No. Cookie butter is a spread made from ground spiced biscuits. In a hot chocolate it is stirred in as a flavour or spread on the rim. Cookie dough hot chocolate is a serve, with dough or a baked cookie holding the drink. We found no source for cookie butter hot chocolate as a cafe trend yet.
