How Many Hot Chocolate Flavours Should a Cafe Have? A Flavour Menu From Surat to Kolkata

In October 2026, Google in India suggests "pistachio hot chocolate in surat". When we typed "pistachio hot chocolate in", Surat was the only Indian city it offered. Goa gets "parisian hot chocolate in goa" and "persian hot chocolate in goa".
We looked for Surat cafes that sell a pistachio hot chocolate and found none in the listings we read. The search is there. The cup, as far as we could see, is not.
That raises a question every cafe owner faces: how many hot chocolate flavours should a cafe have? This article covers what Indian cafes offer now, where the pistachio search comes from, and a simple four-flavour menu.
What Indian cafe menus offer
Published lists of hot chocolate in Pune and Kolkata show a wide range.
1. In Pune, LBB lists one cafe with 4 flavours on one dark chocolate base: classic, rose, orange and spiced. Another shop lists 10 flavours, from mint to red velvet. A chain lists 8. On Zomato, one Pune cafe lists a cinnamon hot chocolate at Rs 340.
2. In Kolkata, LBB and Slurrp list cafes with 3: classic, dark and hazelnut, or milk, dark and hazelnut spread. Another serves Spanish, British and chilli versions.
3. In the Ahmedabad and Surat reviews we read on Restaurant Guru, hazelnut was named more than any other flavour.
Across the menus and reviews we read for this series, hazelnut came up more often than any other single flavour. That is a count of what we read, not a survey.
Where the pistachio search comes from
Our best guess is Dubai chocolate. It is a chocolate bar filled with pistachio cream and kadayif pastry, created in Dubai in 2021. It spread on TikTok in 2024, and copies and spin-offs followed, according to Wikipedia.
Google India also suggests "pistachio kunafa hot chocolate" and "dubai kunafa hot chocolate". We think some customers now want the bar's flavour in a cup. We have not confirmed that link with any sales or survey data.
How many flavours should a cafe have?
Our suggestion is four. This winter, lead with Belgian and cinnamon. This is our judgement, not a tested rule.
1. Belgian. A smoother, milkier cup. In our view, it suits customers who find a dark cup too bitter, and it makes a safe first order.
2. Cinnamon. Toasted cinnamon on a dark cocoa base. Spiced cups already sit on menus in Pune, Kolkata and the Tricity, so customers know the idea. It also covers the customer who wants a darker, less sweet cup.
3. One nut flavour. Hazelnut, because customers named it most in the reviews we read. Or pistachio, if you are in a city that searches for it, such as Surat.
4. One rotating flavour. Orange, rose or chilli, changed every few weeks. It gives regulars a reason to come back and gives you something new to post.
Our reading: four cups, led by two. More flavours mean more stock, not more sales.
Why not ten?
In our view, every flavour adds a syrup or paste to buy, store and train on. A cafe with ten flavours on a small menu ties up stock in the six that rarely sell.
One cafe in the Pune list runs four flavours on one dark chocolate base. That is the model we suggest. The base is the product. The flavour is a few grams on top.

These are our suggestions.
1. Make the base first, thick and portioned. Our method article covers how.
2. Add the flavour last, as a paste or syrup stirred in. Fix one measure per cup, write it on the recipe card, and use the same spoon every time.
3. Keep the base the same in every cup. If the base is thin, no flavour will save it.
What it costs you
By our own costing in our pricing article, a classic cup made with one 50 g sachet of our premix costs about Rs 60 to 88 in full, with milk and a cup.
A flavour adds the cost of the paste or syrup. Check your supplier price before you set the menu. On Zomato's delivery menus in October 2026, flavoured cups in Pune run from Rs 259 (hazelnut spread) to Rs 410 (hazelnut). In Chandigarh, one cafe charges Rs 20 more for hazelnut than for its classic cup. Our survey of chain menus puts most chain hot chocolates between Rs 200 and Rs 280.

We do not know. Our guess is that flavours that start as a viral bar fade within a year or two.
That is why our suggestion keeps the nut slot and the rotating slot open. If pistachio fades, the slot goes back to hazelnut. The base, and the menu, stay the same.
