Direct Trade, Deliberately Slow
Honey processing asks for patience most estates cannot afford, the parchment is turned by hand for up to three weeks on raised beds. Sangameshwar holds that discipline, which is what gives this lot its dark-chocolate depth instead of the flat sweetness of a rushed dry.
We buy this lot direct from the estate, every season, at a fixed premium above commodity rate. It is priced for cafés that want one exceptional single origin on the bar, brewed black, and are willing to charge for it.

Questions people ask
What does honey sundried mean?
The coffee cherry's sticky layer (mucilage) stays on the bean while it dries in the sun, turned by hand for up to three weeks. That slow drying gives this lot its dark chocolate depth.
How should I brew it?
Black, as a pour over, French press or espresso. Our pour over recipe uses 18 g with 300 ml of water at 93°C.
Can I add milk?
Yes. Its medium bitterness keeps its shape under milk, but black shows the most flavour.
How long does it stay fresh?
6 months in the sealed bag, counted from the roast date. Whole beans stay fresh longer than ground coffee after the bag is opened.
