New cafe owners buy the dearest coffee they can find.
Or the most famous brand.
Then the first week shows what customers order. Cappuccino. Latte. Cold coffee. Milk, almost every time.
We sell a Rs 2,100 single origin ourselves. We would not open with it.
Before you buy a kilo, know two things: what your coffee has to beat in your city, and what a shot costs.
What is the milk line for coffee?
In our hot chocolate article, we drew a milk line. Above it, milk is plentiful and is the drink itself. Below it, milk is a carrier for coffee, tea or malt. Read it in our weather vs preference piece.
For coffee, the same line asks a different question. What does your coffee have to beat?
Above the line, in Punjab, Haryana and Rajasthan, it beats chai and instant. Below the line, in the South, it beats a filter coffee that is already the habit.
This is a competition map. It is not a demand map. Weather and habit decide different things. Here is the catch: the line does not tell you where coffee sells. It tells you what you are up against.
What do cafe customers actually order?
Milk coffee. 80% of coffee consumers in the Coffee Board's 2023 survey add milk. 18% drink it black.
Cold coffee is the fast mover. Google searches for it in India went from 24 to 75 between 2021 and 2026, on a 0 to 100 scale inside its own group of terms.
And people who open cafes are searching too. "Cafe franchise" went from 31 to 59 in the same years. Many are looking before they have a customer in front of them.
What is the coffee mistake new cafes make?
They pay for taste before they know the order.
At an 18 g double shot, the beans in a single origin shot cost Rs 37.80 at our prices. A House Blend shot costs Rs 17.82. The difference is about Rs 20 a shot.
At 50 shots a day, an example, that is Rs 1,000 a day. For a drink that is mostly milk, the customer cannot taste most of it.
The home dose version, at 15 g a cup, is in blend vs single origin.
Our beans and supplier article has the eight questions to ask a supplier. This one is about which blend, and where.
Which coffee blend for which location?
Four kinds of location. Our read. Only the first has our own orders behind it.
1. In the dairy belt, buy a blend with Robusta body.
North and West cities. Customers come from tea and instant, and milky drinks dominate. In our orders, the 21 North cafe and restaurant accounts that bought from us since July 2025 put 33% of their order value into blends. Nowhere else is it a real share. The full map is in what 59 cafes ordered.
The West figure leans on one Pune chain of 24 outlets that buys mainly hot chocolate. Gujarat is on the milk-rich side of the line, at 700 g of milk a person, well below Punjab. So we do not read West as proof.
Our suggestion: 80/20 or 70/30 for hot milk drinks, and one 100% Arabica for black coffee drinkers. Cold coffee has its own section below.
2. In the South filter belt, do not fight the tumbler.
The South is 75 to 80% of India's coffee volume, and about 75% of the coffee drunk in India is chicory mixed. One Bengaluru hotel raised its filter coffee from Rs 15 to Rs 18 in April 2025. You will not win on price.
Our specialty coffee article already says what to serve against the tumbler: espresso drinks and cold coffee. What it did not say is which blend. 80/20 is listed for espresso and South Indian filter. We have 7 South accounts and almost all buy hot chocolate, so this is a guess.
3. In metro preference pockets, add one single origin beside the house blend.
Searches for specialty coffee are highest in Goa (100), Telangana (55), Karnataka (25) and Delhi (21), against 8 in Uttarakhand and 5 in Bihar. That is where a pour over can find a buyer. Our specialty coffee article tells that story, and the two-SKU article tells how to run it.
4. In hill and tourist towns, keep one all-round blend.
The crowd is mixed and our data is thin. One blend that works in milk drinks and black coffee, such as House Blend, is the safe start. The full case is in hill station cafes and coffee blends.

The milk lineHot Chocolate Sells Best Where Milk Is Scarcest6 min read →Which coffee blend for cold coffee?
Cold coffee is the volume drink. Searches went from 24 to 75 between 2021 and 2026.
Ice and milk both thin a coffee. So the base needs body. Our suggestion: 70/30 or the Robusta forward Vietnamese Blend. Both cost under Rs 20 a shot in beans.
What should you buy first?
One blend for milk drinks. That is the lesson in all four rows.
Taste it in your best-selling drink, with milk, not as a shot on its own. Our pricing and supplier checklist says the same.
For the black coffee slot, the cafe grade sampler holds 100% Arabica and Vienna in 100 g packs.
What to do next
- Write down your five best-selling drinks. Count how many have milk.
- Find your location type above, and pick one blend.
- Work out your cost per shot: price of a kilo x 18 / 1,000.
- Ask for a cafe sample on our B2B partnership page. Taste it in a cappuccino and a cold coffee.
- Add a single origin only after the blend holds, and only if your location is a preference pocket.
The dear bag wins the photo. The right blend wins the month.
